Firstly congratulations on completing your engineering graduation. Secondly why do you wish to put in 2 years of time for preparations?. Anyways the choice is yours.
Coming to your question now. The answer is simply "YES". And the logic is simple. After 2 years when you get back to the industry, firstly you would be considered a fresher. Secondly you may have forgotten your concepts because of not being in touch with your subject. So employers may exploit you or may doubt your competencies and thirdly you would compete with freshers just out of college who are ready to begin at a junior level and lastly your batchmates may have moved to a higher position.
In terms of gate preparations, I really dont understand why 2 years would be required. My suggestion would be that take a part time job and at the sametime focus on preparations. Please note there are weekend batches available for gate preparations. You could opt for that and a full time job too please note no one can dedicate 24 hours for preparations. It is your commitment and a goal you wish to chase. Hence after you come back from work also you would dedicate 2 hours towards your preparations.

Firstly, you don't really need 2 years preparation for GATE exam. Yes, the exam is tough but all you need is a consistency over your study plan and a logical strategy.
If you truly wish to clear the exam, 6 months of hard work with smart strategy will help.
But if, in the case, in your 1st attempt you couldn't make it then don't be disappointed, join a job and then you can prepare for the exam when you are back from work.
However, you need to ensure that during your initial level of preparation, you should completely focus on concept building.
And join a job related to your core. This is not for money but to have a year of work experience that you can get before clearing the exam and there wouldn't be much pressure on you.
