The sooner one realises the better it is. Even if it has costed you a year it is alright, because now you know what you wish to do and would be able to concentrate better.
I would suggest, pursuing 12th through CBSE than NIOS, since NIOS students have a lot of subject restrictions.
As far as Hotel management is concerned after class 12th, you would have to clear the entrance exam and then opt for the 3 years course. Please note Hotel management course is a mix of theory and practicals, whereby the student attends college in the morning and then is working as an intern in the evening at hotels. During this time, you would be exposed to all the departments right from House keeping to Restaurant and bar to reception to job as a waiter and cleaner. The reason for exposing you to menial jobs is that when you graduate, you are ready to work as a manager, since you know the ground level job.
Please note Hotel management job has no fixed timing, you would have to do night shifts too.
