Congratulations firstly that you are doing courses related to education the most needed field as we have shortage of well educated people in this line.

But now I am confused, why have you chosen Education field after Microbiology and now again looking back towards science field.

If teaching is what you are looking out for, then you could opt for an M.Ed and teach in colleges.

But coming back to your questions, choosing a masters specialization.
Now as a microbiologists, you have many options open. Few of them are:
  • Immunology
  • Pathology
  • Medical Microbiology
  • Animal and plant Microbiology
  • Industrial Microbiology
  • Genetics and neurology
  • Pharmacology
  • Dietetics
  • Food and Nutrition
  • Physiotherapy

Any field that helps in study of microbes and its effect on living organism, is the field of study you could look for.

As far as your other question is concerned, Food and Nutrition is unavailable as a part time, since it involves practicals too. But few colleges or institute provide it as a Diploma or certificate courses ranging from 6 months to a year. But they are just a brief over view. A masters degree is essential to establish oneself as a dietician.

Choose wisely. There is a a lot of scope.

Wish you all the very best.............
