Here I would say that both are equally important.
Once you have gained experience working as an assistant photographer, when you apply for a job elsewhere or rather freelance, you would need to show your certificates
Thus certificates or a Diploma program in Photography is a must. Also without knowledge in the functioning of photography, lenses used, modifying etc, how would you be an Assistant to a photographer. Here, you can pursue a course and at the same time, work as an assistant. It saves time, and at the same time, you gain experience, since what you learn you are also experiencing it working with a professional.
