It's a good thing to learn beyond your technical expertise and enhance your creativity. This will add to the innovations that you can bring in your work. I am mentioning few non technical courses that would be helpful for you as a Computer Engineer:

Economics:When you have a knowledge of Economics, it's a huge advantage in today's world. It may sound boring and uninteresting but down the years you will realize it was one of the most important courses that would help you all throughout your life.

Language:You can learn a new language purely out of interest or you can learn more about some known language. Again, this will come as a fun exercise but add great benefits to you in your career journey.

Art:Took one or two courses of Art. This will help you in understanding the human interest matters and hence creativity. Some people really get benefited from such courses. They consider it as a source of inspiration.

Psychology:Working with the people is one of the greatest challenges in today's world. Taking a course like psychology will help you understanding more about the human behavior and therefore your productivity in working as a team and as an individual will improve.

Mathematics:This is something which will help you from your day to day work to the long term projects.
