The Ministry of Food Processing Industries is a service of the Government of India in charge of plan and organization of the guidelines and directions and laws identifying with nourishment preparing in India. The tasks a Processing Man (Food Canning & Preserving) is expected to perform include:'

• Heating containers of canned or preserved foods to sterilize their contents, by means of hot water vats, troughs or retorts
• Filling vats or troughs with hot water
• Heating water to required temperature by steam or gas
• Loading material by hand or mechanical hoists
• Keeping seamed cans for a specified time in hot chest
• Removing sterilized seamed cans from chest box
• Cooling processed cans in retort
• Injecting compressed air to counteract pressure within cans
• Cleaning and sterilizing chambers at regular intervals
 
The key competencies are:
 
   Knowledge of health and safety rules
• Knowledge of criticality of temperature required for gaining quality final product
• Skilled in handling seamed cans by relevant machines/tools
• Skilled in controlling pressure inside the chambers
• Skilled in sterilizing the chamber, when required
• Familiar with cooling techniques used in the process
